Ode to Chocolate

Chocolate delays reality. When I am eating chocolate, everything is on hold: anxiety, panic, frustrations, and insecurity. Chocolate offers a profound richness, a sweetness of life, a euphoric sensation of luxury. I love chocolate in many forms, from M&M's, to imported Lindt balls, to dark fudge frosting in a pop-top can, to Hershey's dark chocolate bite-sized morsels.

It is difficult to eat only a diminutive chocolate. I cheat myself when I chew it up swiftly and swallow it like other food. To eat chocolate correctly, one must let it melt in the mouth with eyes closed, feeling the tasty, thick level velvet coat the tongue. It is also difficult to eat nothing else but good chocolate silently. I regularly purr a long ummmmmmm of feminine pleasure when enjoying such a pleasure.

I have strategies to keep from eating chocolate. I meditate after lunch, enjoying the sweetness of life without calories, I brush my teeth after drinking my afternoon coffee, and I give chocolate away to my mom so that it's not in the house. But it comes back as gifts from other sources, knowing that it is loved and cherished in my presence.

My daughter loves chocolate, too. A hereditary trait, I guess. Sometimes my mom and my daughter and I enjoy chocolate together, a female bonding of sensuous gratification.

We give each other gifts of Easter Bunnies, Christmas balls, and Valentine confections, then share our blessed bounty with each other. We hide it from other house members, and never apologize for succumbing to such greedy decadence. We have trained the men in our lives to buy it for us as well by expressing our enjoyment and pleasure as lip-smacking, vocalized bliss. It's as if we permit our chocolate gift givers to be voyeurs of our pleasure.

I have a girl friend who refers to chocolate as the fourth basic food group. She eats it publicly, in front of people, instead of holding inexpressive chocolate sessions where no one can count bites or pieces. Self-righteous jailers they are, those indignant souls who reprimand us. Sometimes it is us, ourselves, our split personalities loving and hating our obsession. My sister-in-law denies her children from chocolates' evil influence, but yields personally to its entrapment. Chocolate calls her name, beckoning her in a trance- like state to effect its' seductive aroma to the kitchen. I know that aroma well, it cannot be contained in a cardboard box, a foil wrapper, or an insulated refrigerator.

Sometimes I eat chocolate to wake me up, or to keep on working when I want to stop and take a nap. Much favorite to a carrot on a stick. A self-imposed bribe to keep pushing. Of course, this bribe has negative consequences when my jeans don't fasten.

I suppose the alligator here is the addiction. But addiction to what? Chocolate? Or pushing to achieve? What a shame that my time is spent in activities that don't burn calories. Striving, planning, dreaming, persisting, setting boundaries, checking off chores, reviewing goals, paying bills.

I refuse to give up chocolate. I know women who have. Women committed to thin. I'm committed to enjoying my life. I have standard other limitations, and I refuse other desserts, bread, and wine while the week. But chocolate has its place.

- Sift the flour, cocoa powder, sugar, baking powder, baking soda and salt in a bowl.

- Add 1 cup + 2 tablespoons of oil and 1 cup + 2 tablespoons of water to the flour mix and whisk well to get an even mix.

- Add the egg mix to the flour mix and whisk well to get an even mix.

- Pour the batter in the greased pans.

- Bake in the preheated oven at 350F for about 25-35 minutes.

- remove the cakes from the oven and cool in the pans for about 15 minutes.

- remove from the pans, wrap in aluminium foil and store the cakes in the freezer for about 2 hours before icing or serving.

Delicious Buttercream Frosting:

- Egg whites of 5 large eggs

- Fine granulated sugar - 1 cup + 2 tablespoons

- Unsalted butter at room temperature - 4 sticks

- Vanilla citation - 2 teaspoons

- Salt - A pinch

Method:

- In a bowl, take the egg whites and sugar and whisk them.

- Place on a duplicate boiler and keep on whisking until the sugar dissolves and the egg whites are just hot.

- remove from the heat and keep whisking to get a glassy mix.

- Cut the butter in small cubes, add to the above mix and use an galvanic blender to get a smooth mix (use a paddle mix).

- Add the vanilla and salt and mix well.

- Your buttercream frosting is ready.

- You can add assorted colors, food gels and flavors to the frosting.

This can be stored in the fridge for about 6-8 weeks. Make sure that you use it at room temperature.

To assemble the cake:

- Stack the cakes on top of each other and add a layer of frosting in in the middle of each layer.

- Cover with frosting from all sides and chill before serving.

Directions:

Preheat oven to 325 degrees. Detach egg whites in a bowl and let them come to room temperature. In a Detach medium bowl, sift gluten free flour, salt, xanthan gum, and 3/4 cup of sugar. Beat the egg whites until foamy. Add the cream of tartar. Beat until the egg whites form soft peaks. Beat in the other reserved 3/4 cup of sugar a exiguous at a time. Beat until stiff peaks form. Gently fold in flour compound about 1/4 cup at a time. Once the flour compound is combined, fold in the vanilla.

Chocolate Mousse dessert:

1 package chocolate chips, 12 oz. Semi sweet 3 eggs 2 pints heavy whipping cream 3 tsp powdered sugar 1 Gf angel food cake

Melt chocolate chips in microwave. While melting, whip cream with 3 tsp powdered sugar until whipped cream consistency is achieved (it takes my stand mixer about 10-15 minutes).

While cream is whipping, break apart angel food cake and dispose in 9x11 lasagna dish or trifle dish.

Add 3 eggs to melted chocolate and mix. Fold chocolate into whipped cream, pour over angel food cake pieces and refrigerate.

My issue (well, one of them) is that I eat quite a lot. The reason I eat most of the time is because I am emotionally tied to my food. Every time I bite into something it reminds me of a clear place in time. It is assuredly a blessing and I need to make it be not a curse. It is something I have to work on transforming.

As soon as I bit into this beautiful Chocolate Chiffon Cake I was taken back to the French store in Disneyland. French store has always been my popular cafeteria in Disneyland since I was a kid. The band plays New Orleans jazz and it surely compliments the food, development it even more lively. Even if the band isn't playing you can hear the murmur of population all over the park enjoying themselves. Before you even walk in the door you can smell the aroma of fresh clam chowder and fried chicken. What I immediately zap into when I taste this cake is that occasion when I bite into the dessert. Ever since I was limited I have been getting their chocolate cake. They have these great chocolate cakes with pictures of the characters on the front. There is nothing like that cake and all the memories of the moments I have in that one spot. That is why I will always make this lightly rich chocolate chiffon. It is always yummy. Next time I go to the French store you good bet I will be in the same table upfront with my limited chocolate cake.....feel free to say hi.....

Here's the formula to send you back to your own memories....I hope you enjoy it.*

Ingredients: 1/2 cup baking cocoa, 1/2 cup of baking soda, 3/4 cup very hot water, 1 and 3/4 cup of cake flour, 1/4 tsp cream of tarter, 7 eggs separated, 1 tsp salt, 1/2 cup sugar, 1 and 1/4 cup of Splenda, 1/2 cup vegetable oil, and 2 tsp vanilla extract.

Ingredients for Icing: 1/3 cup of butter, 2 cups of confectioners' sugar, chopped pecans, 3 to 4 tbs hot water, 2 squares unsweetened chocolate melted and cooled, and 1 and 1/2 tsp vanilla extract.

1) Eggs should stand at room climatic characteristic for about 30 minutes. In a large bowl, put together the cocoa and water. Stir until it is plane in texture. Cool for about 30 minutes. Invert cake onto a serving platter.

3) Melt butter in a pan. remove from stove. Then you stir in the confectioner's sugar, chocolate, vanilla, and water. Then have fun drizzling over the cake. Sprinkle with pecans.

Chocolate Pots with Grilled Banana

Ingredients

Food And Dessert

200g Plain Chocolate
100g Milk Chocolate
6 marshmallows, roughly chopped
300ml crème fraîche
150ml skimmed milk
3 bananas, unpeeled, cut diagonally into 1cm slices

Method

Break the chocolate into squares and place in a large bowl with the chopped marshmallows.
In a pan over a moderate heat, bring the crème fraîche and milk to just below boiling point.
Pour the cream aggregate over the chocolate and marshmallows.
Mix well until the ingredients have melted and combined.
Pour into 6 ramekins. Leave to cool, then cover and chill in the fridge until set.
Using the dying embers of the barbecue, or a griddle pan, barbecue the slices of banana for 1-2 minutes on each side.

Serve with the chocolate pots, topped with extra marshmallows.

Chocolate and cherry mousse

Ingredients

400g chocolate mousse
400g black cherries, drained and roughly chopped
3Oml cherry liqueur (optional)
100g dark chocolate, melted

Method:

Mix the chocolate mousse, cherries and liqueur in a bowl.
Spoon aggregate into small bowls and top with melted chocolate.
Allow to set before serving with fresh or canned cherries and whipped cream.

Strawberries with hot chocolate dipping sauce

Ingredients

200g dark chocolate
125ml cream
500g fresh strawberries, washed and dried
30ml chocolate liqueur

Method:

Make your chocolate sauce by melting the dark chocolate with the cream in a saucepan and stir until plane and well blended. Stir straight through liqueur and pour into a serving bowl.
Place strawberries on a platter and serve with hot chocolate dipping sauce.

Dark Chocolate and orange Cheesecake

Ingredients:

1 packet digestive biscuits, crumbed in a food processor
125g butter melted
400g cream cheese
250ml cream
Zest of 1 orange
200g vanilla yoghurt
50ml orange juice
3 organic eggs
200g white sugar
1 slab dark and orange chocolate, melted

Method:

Make a biscuit base by mixing the biscuit crumbs and melted butter.
Press into a baking tin.

Mix all the rest of the ingredients, except chocolate to make a plane filling.
Add into biscuit base.

Drizzle melted chocolate into filling to make a rippled effect.

Bake at 180ºC for 40 minutes or until edges start to go golden in colour.
The cake will still be fairly soft in the middle.

Remove and cool thoroughly before turning out and serving

Ingredients

(This is to make a large birthday cake, you can scale down for an commonplace cake)

Food And Dessert

200 grams of stork or other baking margarine

200 grams of caster sugar

4 medium / large eggs

3 tbs of cocoa powder

Approx 75 grams of cornflour

100 grams of self raising flour

1 tbs baking powder

Vanilla essence

For the Icing

75 grams of margarine

Icing sugar to make a stiff mix

Water

Vanilla essence

Step 1

Using a mixer or food processor, cream together the sugar and margarine until it is light and fluffy. Add 1 tsp of vanilla essence and mix thoroughly.

Step 2

Add the 4 eggs, 1 at a time, mixing thoroughly until each egg is fully blended in. Leave mixer on for colse to 5 minutes.

Step 3

Into a weighing scale, put 3 heaped tablespoons of cocoa powder. Add cornflour to make up to 100 grams, then add 100grams of self raising flour. Ultimately add 1 tablespoon of baking powder.

Step 4

Sieve the flour mix into your mix. Fold in, then mix with mixer until fully incorporated.

Step 5

Split mix between 2 lightly greased non stick 8 inch baking tins. Bake in over at 175 degrees centigrade for colse to 20 minutes. Test by lightly shaking the tin to see if it wobbles like a jelly. (if it does give it 5 more minutes.) If its firm, slide in a skewer to check the mix is cooked. It should not have any cake mix on, but will have steam from the mix. As long as there is no mix on the skewer, remove from oven to cool.

Step 6

While the cake is cooling, mix the margarine for the icing with 1 tsp of vanilla essence and adequate icing sugar to make a stiff mix. Add 1 tsp of water at a time and mix in, the mix will let down and come to be creamy and smooth. Set aside until the cake is cold. Do Not attempt to ice the cake when warm, the icing will go runny.

Tip - when icing, do not spread the icing, as this cake is so light it will break under the pressure. Just add spoonfuls of icing colse to the lowest layer, then put the top on and rotate slightly to spread the filling.

Step 7

Decorate the top of the cake with sieved icing sugar or cocoa powder. Get a cup of coffee, then eat a huge slice!

To make a celebration cake you can ice the outside of the cake and decorate it with chocolate curls, or ice and fill with whipped cream, or make a chocolate fudge icing mix, or use cream and cherries for a black forest gateaux. What ever floats your boat really.

Variations

You can also make this recipe into a victoria sponge, just take out the cocoa and substitute with more cornflour. Then ice with vanilla icing and jam. Or, use lemon essence and lemon icing for a tangy variation.

Easy Vegan sweetmeat method Featuring Vegan Chocolate

I've been cooking vegan again and found an easy-to-make, delicious, nutritious vegan dessert method featuring vegan chocolate and I concept I would share it with you. This dessert is one of three straightforward vegan recipes that I will be writing about in the next few weeks.

What I loved about this vegan chocolate dessert is that it had a similar consistency and taste as regular chocolate mousse but not the same high-caloric, high-fat count as the real deal and therefore, I felt less guilty manufacture and eating this easy vegan dessert recipe. Ingredients are as follows:

Food And Dessert

* 1 cup of vegan semi-sweet chocolate chips

* 1 cup non-dairy milk, such as soy milk or rice milk

* 2 12.3-oz packages of low fat silken tofu

* 1 teaspoon vanilla

Optional

* Vegan graham cracker pie crust

* Strawberries

* Mint garnish

Place the vegan chocolate chips and the non-dairy milk in a microwave-safe bowl and microwave for 1 exiguous so that chips melt. Take the compound out of the microwave and let it sit and cool down.

Then, using a hand mixer or food processor, blend the tofu, vanilla and chocolate chip/non-dairy milk compound until smooth. Replacement into small private serving dishes or the graham cracker pie crust and chill for at least 2 hours.

Thaw the frozen strawberries and then blend them in a food processor or blender with the sugar and the tofu until smooth. Spoon the compound into four serving dishes and refrigerate until chilled. You can also serve this dessert with fresh strawberries or Another seasonal berry as a garnish.
