For many novice bakers, baking cakes may not be the problem. Seeing recipes or decorating may not be the problem either. Their biggest problem may be keeping cakes from sticking to cake pans. In this article, I'm going to give you 5 beneficial tips to ensure your cakes never stick to your cake pans.

1. Make sure to let the cake cool the proper number of time.

If the cake is sticking to the cake pan, the first thing to look at is either or not you're letting it cool sufficiently. Most recipes propose cooling the cake on a rack about 5 to 15 minutes, then running a knife around the edge before turning it out of the pan. 2. Use a blend of equal parts flour, vegetable or canola oil, and shortening.

Anyone after that may be detrimental. However, some recipes call for letting your cakes cool a bit longer. If that's the case, then just corollary the formula instructions. Unless the formula calls for it, stick to tip number 1.

5. Use aluminum foil to line your cake pans.

This is similar to using parchment paper, but is a more cost effective alternative for those economical bakers out there. Aside from being cheaper, you can also mold foil a minute tighter to the pan than with parchment paper. Foil works best for round and square cake pans. You can line your pans with foil enough to reach up and over the sides. You may even use the extra foil as a type of "handle" to help lift the cake out of the pan.

While the cake is cooling, mix the margarine for the icing with 1 tsp of vanilla essence and adequate icing sugar to make a stiff mix. Add 1 tsp of water at a time and mix in, the mix will let down and come to be creamy and smooth. Set aside until the cake is cold. Do Not attempt to ice the cake when warm, the icing will go runny.

Tip - when icing, do not spread the icing, as this cake is so light it will break under the pressure. Just add spoonfuls of icing colse to the lowest layer, then put the top on and rotate slightly to spread the filling.

Step 7

Decorate the top of the cake with sieved icing sugar or cocoa powder. Get a cup of coffee, then eat a huge slice!

To make a celebration cake you can ice the outside of the cake and decorate it with chocolate curls, or ice and fill with whipped cream, or make a chocolate fudge icing mix, or use cream and cherries for a black forest gateaux. What ever floats your boat really.

Variations

You can also make this recipe into a victoria sponge, just take out the cocoa and substitute with more cornflour. Then ice with vanilla icing and jam. Or, use lemon essence and lemon icing for a tangy variation.

Easy Vegan sweetmeat method Featuring Vegan Chocolate

I've been cooking vegan again and found an easy-to-make, delicious, nutritious vegan dessert method featuring vegan chocolate and I concept I would share it with you. This dessert is one of three straightforward vegan recipes that I will be writing about in the next few weeks.

1/2 cup Splenda Brown Sugar Blend
1/2 cup finely chopped pecans
1/4 cup all-purpose flour
1/4 cup butter

Combine all the ingredients together, tossing with a fork until completely mixed. Sprinkle the topping mixture over the pie. Drizzle the maple-flavored syrup over the topping.

Allow the pie to cool completely.

Pumpkin Oatmeal Nut Cookies
1 1/2 cups all-purpose flour
1/2 cup whole-wheat flour
1 1/3 cups quick oats
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
1 cup butter, softened
1/2 cup Splenda Baking Blend
1/2 cup packed Splenda Brown Sugar Blend
1 cup canned pumpkin or cooked pumpkin puree
1 large egg
1 tsp vanilla citation
3/4 cup chopped walnuts or pecans
3/4 cup raisins, optional

Preheat oven to 350 degrees.
Spray baking sheets with nonstick cooking spray; set aside.

In a medium bowl concentrate the flours, oats, baking soda, cinnamon, and salt; set aside.

In a large mixer bowl beat butter, Splenda both white and brown, until light and fluffy. Add pumpkin, egg, and vanilla citation mixing well. Add the flour mixture and mix in well. Stir in the nuts and raisins, if using. Drop the cookie dough by rounded tablespoons onto the ready baking sheets.

Bake at 350 degrees for 14 to 16 minutes until cookie are lightly browned and set in the centers. Allow to cool on baking sheets for a concentrate of minutes then take off to wire racks to cool completely.

Yield: 4 dozen cookies

Diabetic Peanut Butter Cookies

1/3 c. Plain flour

1/4 tsp. Baking soda

1/4 tsp. Baking powder

Pinch of salt

2 tbsp. Shortening

2 tbsp. Peanut butter

1 tsp. Sweet 'n Low

1 egg, beaten

Mix and stir all ingredients in order (flour, baking soda, baking powder, salt, shortening, peanut butter and Sweet 'n Low). Add beaten egg and mix well. Drop by large teaspoon on greased cookie sheet. Bake at 350 degrees for 10 minutes.

Diabetic Fudge

1 14 1/2 oz. Evaporated milk

3 tbsp. Cocoa

1/4 c. Oleo

Liquid Sweetner to equal 1/2 c. Sugar

1/4 tsp. Salt

1 tsp. Vanilla

2 1/2 c. Graham cracker crumbs

1/4 c. Nuts

Combine milk and cocoa in saucepan. Beat well. Add oleo, sweetner, salt. Bring to boil. Remove from heat. Stir in remaining ingredients except 1/4 cup graham crackers. Cool about 15 minutes. Divide combination into 32 balls. Roll in remaining cracker crumbs and chill.

- 2 tb All-Purpose Flour
- 1/2 ts Nutmeg, Ground
- 2 tb Lemon Juice
- 1 ts Cinnamon, Ground

For the topping

- 1/2 c Granulated Sugar
- 1/2 c All-Purpose Flour
- 1/3 c Butter
- 1 lg Paper Bag
- Vanilla Ice Cream

Directions:

Preheat the oven to 400 degrees.

To make the pie:

- combine the first measure of flour, salt and shortening using a pastry blender until the mixture resembles tasteless crumbs, then stir in the water a microscopic at a time, using a fork, and form the dough into a ball.

- Roll out the pastry dough on a lightly floured board. Roll to an 11" or 12" diameter and fit into a 9" pie pan fluting the edges.

- combine the sugar, the second measure of flour, the cinnamon, the nutmeg and the lemon juice in a large bowl then toss the apple slices in the mixture and arrange them in the pie crust.

To make the topping:

2. 1,000 Calorie-A-Bite Trifle

Ingredients:

Fruit
- 3 Pears
- 8 oz Raspberries - (tinned or fresh)
- 1 Passion fruit
- Dry sherry (1 bottle)

Sponge Cake
- 1/2 c Butter
- 10 T Sugar, castor
- 1 1/4 c Flour, self-raising
- 2 Eggs (slightly whisked)

Custard
- 2 Eggs
- 1 pn Salt
- 1 pn Nutmeg
- 10 oz duplicate cream (or use whipping cream)

Topping
- 10 oz duplicate cream
- Roast almonds

Directions:

Peel and slice pears, drain raspberries if tinned, and scoop out passion fruit. Place fruit in large trifle bowl and add an ample quantity of sherry. Leave for twenty-four hours to soak in the refrigerator.

- Preheat oven to 350 degrees F.
- Cream butter and sugar until light and fluffy.
- Add eggs and about 2 T of flour and beat.
- Fold in rest of flour.
- Bake in 7-inch quadrate tin for 25-30 mins until brown.
- Let cool.
- Slice into fingers and arrange on top of fruit. More sherry may be added at this point.
- Pour one large glass of sherry.
- Mix eggs and add all ingredients to small bowl.
- Place bowl in pan of simmering water.
- Stir continuously with wooden spoon, sipping sherry, until custard thickens. This takes about ten minutes.
- Pour custard on top of sponge.
- Chill in fridge.
- Whip cream until stiff and smooth over top of custard.
- arrange almonds decoratively.

3. Mom Ebert's Angel Pie

Ingredients:

- 1 c Crushed pineapple
- 1 c Cold water
- 3/4 c Sugar
- 2 1/2 T Cornstarch

Directions:

- Mix above ingredients and cook until thick; cool, beat 3 egg whites until stiff and fold two together.
- Pour into baked pie shell, top with whipped cream.

4. Watergate Pie

Ingredients:

- 1 c Flour
- 1 Cube soft margarine
- 1 1/2 c Chopped walnuts
- 8 oz Softened cream cheese
- 1 c Powdered sugar
- 16 oz holder Cool Whip
- 2 sm Pkgs. Instant pistachio
- Pudding or any flavor desired

Directions:

There are 4 layers to this recipe. Use an 8 x 12 inch baking dish.

1st Layer:
- Mix together the following ingredients: 1 cup flour, 1 cube soft

margarine and 1 cup walnuts.
- Press in lowest of dish to make crust.
- Bake at 350 degrees for 15 minutes.
- Cool completely.

2nd Layer:
- Cream cheese, powdered sugar and 1 cup Cool Whip.
Mix together and spread over the crust.

3rd Layer:
Mix pistachio instant pudding mix with 3 cups of milk and spread over 2nd layer.

4th layer:
Spread remaining Cool Whip on top and sprinkle with fine chopped nuts.

12 servings.

Food and Drink Paradise - Sugar Free Desserts Challenge!

Boiled Custard

Ingredients

250g dates
500 ml milk
1/8 teaspoon salt
Action
a. Cut the dates into small pieces.
b. Add milk and salt.
c. Cook it in a double boiler for about 1 hour, till thick.
Coconut Pudding

Ingredients
200g desiccated coconut
250g dates
1 egg (well beaten)
500 ml milk
Action
a. Stone dates and fill a shallow pudding dish with alternate layer of coconut and dates.
b. Add egg and milk and pour this over the coconut and dates mixture.
c. Bake in 180°C oven for a nice brown.

Date Cream

Ingredients
500g whipped cream
250 ml milk
1 tablespoon gelatine
200g ground dates
Action
a. Soak gelatine in half of the milk.
b. Whip cream stiff.
c. Boil remaining milk and add gelatine.
d. Let cool, then beat till it begins to thicken.
e. Stir in whipped cream and mix well.
f. Pour into a mould and serve with whipped cream heaped around.
