Peppermint Cheesecake For Christmas

Amy stood at the back of the crowd, trying her best to blend in and appear to be one of the happy smiling children waiting to see Santa Claus. Despite the fact that she was in fourth grade and too old to believe in Santa, she had agreed to go, knowing that her Grandmother was doing her best to make her holidays as general as possible.

The ache in Amy's heart just wouldn't go away but she put on her best face and tried to appear happy for her grandma's sake. For the past any months, sadness seemed to be a permanent part of her life. Although there were other girls and boys in her new fourth grade class that were going straight through similar if not even worse things than she was, that was no consolation when it came to the deep sadness she was feeling.

Amy's father was in the Air Force and had been serving his second tour in Iraq when he had been seriously wounded. The wounds were so severe that they weren't even able to bring him home for the time being. He had been flown to Ramstein Air Force base and transferred to the military hospital in Landstuhl, Germany to be stabilized. For the last three weeks he was lying in the laberious care unit with her mother by his side.

Amy had been sent from her home in North Dakota to live with her father's mother, Grandma Betty in West Virginia until things were great with her father and her mother would be able to return. Grandma Betty had previously lived in the same town as them in North Dakota but when her sister, Thelma became ill any years ago, Grandma Betty had felt it was her duty to move closer to her sister to help care for her especially since her husband, Grandpa Ed had died the old year. Amy had been five years old when Grandma Betty moved and she had not seen her more than once or twice a year since then.

One thing Amy was happy about was that she liked her new school, the children in her class and especially her teacher, Ms. Brown. She was young, bubbly and enthusiastic with her class. She made the time they were at school into an adventure. One thing did have Amy worried however. For Christmas, Ms. Brown gave them the assignment of doing a description on a special Christmas tradition that was observed in each of their families. They were to bring something in to school that tied in with the tradition as a type of show and tell.

Amy didn't want to burden her grandmother with something like that and Amy just didn't know what she could description on as being a Christmas tradition, let alone doing show and tell about it. She remembered some of the great Christmas's she and her parents had famous over the years. Her father was commonly able to be home with them sometime over the Christmas holiday. They all the time had fullness of fun and laughter as they would decorate, shop for special gifts and get ready lots of great food. Every Christmas without fail they had the cheesecake on Christmas Eve and even left a slice out with a glass of cold milk for Santa Claus. Even though Amy was too old to believe in Santa anymore, they still prolonged the tradition every year. Amy didn't know what would happen this year since she was staying with her grandmother. She was almost embarrassed to ask her to make a cheesecake for Christmas eve instead of the customary cookies served in most homes.

As the days inched closer to Christmas and the day she was responsible for reporting on her Christmas tradition, Grandma Betty observation how quiet Amy was being. It was even more pronounced than usual so she sat her down and asked her if there was whatever she could help her with. Amy ultimately told her about the assignment she had for class and Grandma Betty assured her that she would help her come up with something. Grandma Betty told her that when Amy's father was still living at home with her and Grandpa Ed, they had a special, if not quirky tradition of serving Peppermint Cheesecake every Christmas Eve and even left some out for Santa. Amy looked at her with surprise and excitedly told her that they did the same thing every year. She just wasn't aware that what she concept was just a tradition for her and her parents, had nothing else but been something her father had been doing his whole life. She felt a surge of warmth and increased love for her Grandmother as they set out to buy the ingredients for both the show and tell cheesecake and the one for Christmas Eve.

The day of her presentation at school, Amy proudly brought in the cheesecake and presented her description on her Christmas Tradition. Everybody in the class told her that they concept it was a nothing else but cool tradition and loved the Peppermint Cheesecake. any of her new friends even said they were going to ask their parents to start the same tradition instead of the same old milk and cookies they commonly had. Amy excitedly told her Grandmother that the cheesecake and description had been a huge hit. This was nothing else but a bit of a turning point in their association and they became closer as Christmas Eve approached.

After supper on Christmas Eve, they attended the Christmas Eve aid at church and when they arrived back home, they got out the Peppermint Cheesecake to enjoy before putting out the serving for Santa. As Amy prepared to take her first bite, Grandma Betty told her that she had a surprise for her. She took her over to the computer monitor in the corner of the room and turned it on. Before Amy knew what was happening, the faces of her parents filled the screen. Amy couldn't believe her eyes and ears when she realized her grandmother had set up a web cam and she was nothing else but looking her parents from her father's hospital room in Germany and that she could even talk to them.

She found out that her father had been rapidly enhancing and his doctors felt he was up to a short conversation via the web cam to his popular daughter, who was so far away from him during this special time of the year. There were tears in her parents' eyes when she told them that she and Grandma Betty had carried on the Peppermint Cheesecake tradition and via the wonder of the technology, they were all able to share the tradition together.

After she, her parents and grandmother had spoken for a few minutes, it was time to say Merry Christmas to each other and sign off so her father could rest and continue on his road to recovery. With a big smile on her face, Amy took a big bite of her cheesecake vowed to all the time carry on the Christmas Cheesecake tradition.

Frozen Cranberry Orange sweetmeat
1 2/3 cups graham cracker crumbs
1/4 cup ground pecans
3 tbsp granulated sugar
6 tbsp butter, melted

Food And Dessert

Preheat oven to 350 degrees.

Combine the graham cracker crumbs, ground pecans, and the sugar in a bowl. Add the butter to the graham cracker compound and mix together well. Press the compound evenly onto the lowest of a 9 x 13-inch baking dish that has been lightly sprayed with nonstick cooking spray. Bake at 350 degrees for 8 to 10 minutes until set. Cool wholly on a wire rack.

1 pkg (8-oz) cream cheese, softened
1/2 gallon vanilla ice cream

1 can (1 lb) whole-berry cranberry sauce
1/2 tsp almond extract

In a large mixing bowl, beat the cream cheese until smooth. Add the ice cream; mix together well. Gradually beat in the orange juice concentrate. Spread half of the compound over the cooled crust. Cover and freeze for 1 hour to set. Refrigerate the remaining ice cream compound while this time.

In a food processor or a blender, process the cranberry sauce and almond citation until blended. Spread half of the compound over the frosty ice cream layer. Cover and freeze for at least 30 minutes.

Spread the remaining ice cream compound over the cranberry mixture. Top with the last half of the cranberry mixture. Cover and freeze until firm.

This sweetmeat may be frosty for up to 2 months making it a exquisite sweetmeat for holidays or other busy times.

To serve, remove sweetmeat from the freezer 30 minutes before serving time. Cut into squares and serve.

Yield: 12 or 15 servings depending on size.

Quick And Easy Apple Crumble
Apple Filling:
4 large Granny Smith or Jonathan apples
2 tbsp firmly packed brown sugar
1 tsp cinnamon

Crumb Topping:
1/3 cup all-purpose flour
1/3 cup whole-wheat flour
1/3 cup rolled oats
3 tbsp granulated sugar
1 stick butter

Preheat oven to 425 degrees.
Spray a 2-quart baking dish with nonstick cooking spray.

Peel, core, and slice the apples; layer in the ready baking dish. Sprinkle the brown sugar and cinnamon over the apples. Make the topping and sprinkle over the apples.

To make the topping, place all the topping ingredients into a large mixing bowl and mix together well (works best when you use your hands!). Sprinkle over apples. Place in the 425 degree oven and bake 20 to 25 minutes until the apples are softened and the crumble is lightly browned. Best served warm (with a tiny ice cream, if desired).

Variation: You can use this same formula to make a berry crumble by using your beloved berries. Toss a tablespoon of flour with the berries before placing in the baking dish. This keeps the crumble from becoming soggy.

Note To Diabetics: You can make this a diabetic dish by replacing the 2 tablespoons brown sugar with 1 1/2 tablespoons Splenda brown sugar blend and the 3 tablespoons of sugar with 3 tablespoons Splenda Granulated.

Directions:

Preheat the oven to 375 degrees. Bring a large saucepan of water to a boil. Make cross-cuts on the stem end of each peach with a sharp knife and place the peaches in the boiling water. Boil for about 1 minute, or until the skins start to come to be soft. Drain boiling water and exchange peaches to a bowl of cold water to cool. Peel, halve and pit the peaches and set aside.

In a medium skillet, join 1/3 cup of sugar and one tablespoon of butter. Cook together over medium heat for three to five minutes, or until the sugar begins to melt.
Coat an 8x8 quadrate baking dish with non-stick cooking spray. Dispose the peaches inside, cut side up. Pour the melted sugar over the peaches and set all aside.

Vanilla and Rum Sauces Make Holiday Desserts special

My mother's parents were English and many of the meals she fixed for us reflected this heritage. Christmas evening meal was all the time roast beef and Yorkshire pudding. sweetmeat was all the time plum pudding with warm sauce. There are many recipes for plum pudding and all are labor intensive. Mom also served apple pie with warm vanilla sauce. The mixture of warm sauce and fresh pie from the oven was heavenly. Bake in 350-degree oven for one hour or until toothpick inserted near town comes out clean. Serves 10-12.

Chocolate Swirl Coffee Cake

* 1 cup sugar
* 2 cups all-purpose flour
* 1 teaspoon baking soda
* 2 teaspoons baking powder
* ½ teaspoon salt
* 3 eggs
* 1 cup sour cream
* 2 teaspoons vanilla
* ¼ pound butter
* 1 small can or bottle chocolate syrup

Topping

* 1 teaspoon cinnamon
* ½ cup sugar, mixed with the cinnamon

In a large bowl, cream butter and sugar. Add eggs one at a time, stirring until fully blended. Couple dry ingredients and add to creamed compound alternately with sour cream. Add vanilla and blend until smooth. Pour compound into greased 8x12 inch pan. Cut chocolate syrup into batter in pan (using knife to cut into a decorative pattern). Sprinkle with cinnamon and sugar topping. Bake in 375-degree oven for 35 minutes. Serves 10-12.

Yummy Old Fashion Cookie Recipes - Maple Nut Triangles and Date Pecan Ball Cookies

Forget those bagged cookies in the grocery store and make your family some tasty old fashion cookies using my Maple Nut Triangles recipe. This maple flavored cookie with walnuts and chocolate frosting is well worth your time. If you aren't fond of maple, try the Date Pecan Ball Cookies. These tasty little gems, rolled in powdered sugar, are very tasty.

Maple Nut Triangles

Food And Dessert

Bake at 350 degrees for 10 to 12 minutes.

Cream together.....1 cup butter, 2/3 cup firmly packed brown sugar, 1 tsp maple flavoring, and 1/2 tsp salt. Cream well.

Add gradually......2 cups sifted Pillsbury (of course) all-purpose flour and 3/4 cup finely chopped walnuts. Mix fully and chill dough for a few minutes for easy rolling.

Divide dough into three equal parts

Roll out..........1 part at a time on a floured surface. Roll into a large rectangle 12 x 9-inches in size. Cut rectangle into twelve 3x3-inch squares. Cut each quadrilateral in half, diagonally, to make two triangle. Place on ungreased baking sheets.

Bake..............in moderate 350 degree oven for 10 to 12 minutes. Cool on baking sheet 1 minute. Cool fully on wire rack. Frost with chocolate frosting (recipe follows). Ornament with 1/3 cup finely chopped walnuts.

Chocolate Frosting:

Melt a 1-ounce quadrilateral of chocolate in top of a double boiler over boiling water. Add 2/3 cup sweetened condensed milk. Continue to cook 5 minutes, stirring constantly, until thick. Add 1 teaspoon cold water, 1/2 teaspoon vanilla and 1/2 teaspoon maple flavoring. Continue cooking and stirring until of spreading consistency.

Date Pecan Ball Cookies

1 cup butter, softened
1/2 cup sugar
2 tsp vanilla
2 cups sifted flour
2 cups ground pecans
1 cup whole date, cut up
powdered sugar for rolling cookies

Cream butter and sugar together. Add vanilla to sugar compound and stir to mix in. Add the flour and mix well. Fold the pecans and dates into the mixture. Using a teaspoon, take dough into your hands and roll into balls. Refrigerate balls for 1 to 2 hours. Bake balls in a preheated 350 degree oven on a greased cookie sheet for almost 20 minutes. Remove cookies from pan and roll into powdered sugar. After cookies have cooled, sprinkle more powdered sugar over them.
