No Country For Old Men Almond Cheesecake

Everytime I bite into a new dessert it takes me to a whole dissimilar place. When I made this cheesecake I was unmistakably floored by the taste of it. It was sophisticated and softly sweet...another words it took me back to all the old Academy Award nights at our house. Since I have been an actress since I was nine, my mom has been a costume designer, and my step-dad is a producer; we all enjoy the award ceremonies in dissimilar ways. I was always watching the actors, Mom is always watching the costumes, and Davey is watching everything about it. While the award ceremonies have diminished over the years we still bring ourselves to sit down together and enjoy awards, food, and company. No matter what surroundings we were in over the years (bad neighborhoods, good neighborhoods, other neighborhoods), we always felt sophisticated and sweet on those nights. As if the world is open to us and what we have to give. I hope to bring the same to my children (whenever I am lucky enough to have them). In the mean time I hope to bring you all a tiny bit of the sophistication and sweetness that this world has to offer. Here's a good start!

This is my No Country For Old Men Almond Cheesecake. It is named after the movie because it was the winner of all the desserts so far. (Very cheesy both figuratively and literally). Here is the recipe:

No Country for Old Men Almond Cheesecake*

Ingredients: 1/3 cup of butter melted, 1 and 1/4 crushed vanilla wafers, 3/4 finely chopped almonds, 1/8 cup of sugar, 1/8 cup of Splenda, 1 and 1/2 tsp almond citation for filling, 4 eggs slightly beaten for filling, 32 oz cream cheese softened for filling, for filling 1/2 and 1/8 cup of sugar, for filling 1/2 and 1/8 cup of Splenda, 1 tsp vanilla citation for filling, 2 tbs slicd almonds toasted, 16 oz sour cream for topping, 1/8 cup of sugar for topping, 1/8 cup of Splenda for topping, and 1 tsp vanilla citation for topping.

1) In a small bowl, put together the crushed wafers, chopped almonds, sugar, and Splenda; stir butter in. Press on the bottom of a ten inch springform pan; set aside.

2) In a large bowl, beat cream cheese, sugar, and Splenda on low until smooth. Beat eggs into mixture on low speed. Stir in extracts. Pour onto crust. Put the pan on a cooking sheet before you put in oven.

3) Bake at 350 degrees for about 50 minutes (center will approximately be set). Remove from the oven; let stand for 5 minutes (keep oven on). Stir the sour cream, sugar, Splenda, and vanilla together. Spoon nearby the edge of the cheesecake. Carfully spread over cheesecake with a soft metal spatulla. Bake for 5 minutes. Cool pan on wire rack for 10 minutes. Run a knife nearby the edge of the pan so the cake will loosen. Do not Remove from pan yet. Cool 1 hour longer. Refrigerate for 6 hours (or overnight).

4) Before serving, sprinkle with almonds and Remove pan. Make sure to keep cake refrigerated.

5) Enjoy in rapture.

1 ½ of boneless sirloin (or any cut will do)
2 tbsp lemon juice
1 glove garlic
1 ½ tsp cumin
1 tsp salt
½ tsp chili powder
1 lg green bell pepper (or use 1 med green and 1 med red bell pepper for color)
1 lg onion

Brown meat in 2 tbsp of oil. Place meat into Crockpot. In a bowl mix together the lemon juice, minced garlic, cumin, salt and chili powder and pour over meat.  Cook on high for 3 hours, or leave it on low and it is ready when you get home. An hour before you eat add the thinly sliced green peppers and onion. If you are in a hurry sauté the onions and peppers on the stove top for a few minutes. Slice and serve up the beef with flour tortillas, shredded cheese, sour cream and your popular salsa, and dinner is served. 
Note: If you are in a hurry you do not have to brown meat, just add 30 minutes too the cooking time.
 
There are so many great slow cooker recipes out there. From main dishes, to appetizers, desserts and warm beverages roughly anyone can be made in a slow cooker. So take a bite out of take out, and treat your house to a home cooked meal that only seems like you slaved in the kitchen all day.

My Thanksgiving Turkey

The Thanksgiving turkey - why is it the cause of stress for so many people? I know I am not the only someone who has viewed that turkey as my enemy on Thanksgiving because Butterball turkey has a hotline that receives thousands of calls each year from citizen with varied turkey questions. The following year I was busy with a baby and again forgot to buy my turkey in time to get it fully thawed so I was up most of the night before Thanksgiving running cold water over my turkey to get it thawed. The turkey ended up turning out okay but I was so tired and crabby by the time I served dinner that I didn't care either or not the turkey was done.

Then a few years ago I got the interesting idea to deep fry my turkey. some citizen recommended it to me. They said a deep-fried turkey was delicious. I thought, "Deep-fried food is delicious. My turkey problems are solved!" So I bought a turkey fryer and two big packaging of peanut oil for frying that turkey. But I didn't buy any marinade to inject into the turkey against guidance from lots of people.

My husband was in fee of deep frying the turkey in the stable while I was finishing up the side dishes in the kitchen. The directions said it would only take 30 minutes to deep-fry the turkey. Because we wanted the turkey to be nice and hot for dinner, my husband didn't start cooking it until about 40 minutes before dinner. That seemed about right to us. I don't know exactly what happened but that darn turkey took a whole lot longer than 30 minutes to cook. Instead of having turkey as our main course, we had it as a very late dessert! We concept that was okay though because the turkey looked deliciously brown and crispy when it came out of the fryer. But because we hadn't seasoned it at all, it was pretty blah and bland. We learned the hard way that when every person we ask recommends injecting a turkey with a marinade for flavor before cooking it, that it is probably a good idea. That year my Thanksgiving turkey cost me well over 0 when I calculated in the cost of the fryer, the oil, and the turkey. For that amount of money I could have ordered our whole Thanksgiving dinner from a local restaurant.

The next year I was listening to a local radio center one morning in early November when the female morning show host started talking about how she made her Thanksgiving turkey. She said the method was a slight involved but that it made a tasty turkey. I was ready to give it a try. I downloaded and printed the recipe, all three pages of it. making that turkey was like taking care of a baby for nearly two days. It had to be seasoned and put in brine; patted dry; seasoned again; then put in other brine to soak. Then I ultimately got to cook it. I was so proud of that turkey. I concept it was going to be the best tasting turkey ever since it was the most work I ever put in making a turkey. But that didn't happen. Nobody liked the flavor of the turkey so I again had lots of leftovers that nobody wanted to eat.

At that point I decided I wasn't meant to cook a turkey. A turkey and I just didn't get along. So for two years I didn't make turkey. But for some infer my family concept it wasn't Thanksgiving without turkey. I wasn't sure why they missed it. It never tasted good. Then I realized what it was. The Thanksgiving turkey was a each year joke at our house and when I didn't make one there was nothing to complain about. The turkey jokes couldn't be made.

So last year I tried yet again. But I talked to my son who was taking a culinary arts policy at the time for tips. He assured me he could help me make a better turkey. And he did. Our turkey last year was great. And making it wasn't complicated. It was so tasty and so easy to make that I make turkey every couple of months.

Thanksgiving Turkey Simplified

Ingredients:

One 5-6 pound turkey breast, thawed and patted dry

1 tablespoon kosher salt

1 teaspoon freshly ground black pepper

1/2 teaspoon garlic powder

10-12 sprigs fresh thyme (or 1 container from your grocer's yield case)

1 cup water

Place turkey in a roaster. I use a Nesco roaster, but you can also bake it in the oven. Pour the water in the bottom of the pan. Sprinkle the turkey with the salt, pepper and garlic powder. Place the thyme springs on top of and around the turkey. Cover and bake according to the directions on the turkey package.

If baking the turkey in the oven, remove the cover during the last 30 minutes of cooking to brown and crisp the skin.

After taking the turkey out of the roaster or oven remove the thyme springs from the turkey and discard them. Let the turkey stand for 10-15 minutes before slicing and serving.

Sick Of Eating Healthy?

When I read box labels in the supermarket, am I the only one who thinks I'm reading about "health" food? A food maker makes his products low fat. That sounds healthy, right? Wrong. The products have so much sugar I could serve them for dessert.

I recently read that the average American eats two and a half pounds of sugar a week. First, who are these average Americans? If they eat that much sugar, shouldn't they be easy to see? By eating natural sugar in things like apples - plus anything that means sugar because it ends in "ose" - plus man-made sugars like high fructose corn syrup, I supposedly see an average American every time I look in the mirror. How come if I'm enduringly on a sugar high, I find this depressing?

I love breads, pastas and rice. Wasn't there a time when loading up on these was supposed to be good? Wasn't it what runners ate to build energy? Now these foods are called "refined". Now they're not good because they're man-made. Obviously, refined doesn't mean man made it fine twice.

Then there are the chemicals that are put in foods to increase shelf life. My son's cereal has an expiration date of 2010. I'd eat it too if I'd have a longer shelf life. Why not? By the time I've used brown sugar, raisins and milk to make a bowl of good-for-me oatmeal taste good, I've turned it into a morning meal sundae.

It's not easy to eat healthy. I tried to get my house to eat tofu, but they insisted I'd put meat tenderizer on an eraser. Serving fresh vegetables was more successful, but my younger son refused to eat eggplant. He won't eat eggplant because our dog won't eat it and dogs drink out of toilets.

No eggplant for him - no Coke for me. When I was a child I used Coke to take rust off my bike. It can't be good. For years I told the boys that chocolate wasn't good for them. Now they say chocolate is wholesome because it strengthens bones. "Snickering" is healthy!
